Description	Café Optimum opened in 1979 as a coffee house and then expanded its offerings to brunch and dinner. It had a reputation for great, fresh seafood and vegetables. Owner D.J. Zentner, a former health teacher, believed in only serving food that left "people with optimum energy and not loaded down with heavy fats." All the fish were hook-and-line caught and then bled immediately, for optimal flavor.
